When I'm typing in German, there are a few usefull special characters like ö, ü and ä. But I am offered many more, which makes it harder to use them. Is there any way to edit the longpress menu for each character?

No, but you can put the umlauts on your custom keyboard so it's a matter of pressing e.g. sym+u to get the ü. But you'd have to use a different combination for the capital Ü though.

With older versions (keyboard v.2.7.x) you can then also use SYM (release) SHIFT+U (or even SHIFT (release) SYM+U) to get that "Überraschungsei" typed in fast.

With version 3.0.0.x there are some troubles again with SYM staying open or (auto)-Capitalisation inside a word.
