    Look at your Convenience Key settings.

    Just Follow These Steps
    1- Go to settings
    2- Open General
    3-Tap on Accessibility
    4- Open "Assist Touch" Option
    5- Disable it
    Your Google Assistant will be disabled.

    Sounds like you have your convenience key set to it. You can change that setting in the convenience key settings.
