If I use the same Sim and SD card is this all I need to transfer all my apps, shortcuts etc. From K1 to K2?

None of your shortcuts are going to move since the settings aren't backed up anywhere and as far as apps go, it will keep track of them, and offer to reinstall them assuming you used the Google backup options, but most data associated with them will be gone unless they each have their own built-in backup functions that you're utilizing. In other words, moving your SIM and SD has next to no relevance.
