Uhm since a little while ago, out of nowhere my "Today" display stopped showing up, even on new themes that I downloaded recently. Anyone have any ideas on how to make it show again or fix the problem?

Go to Options > Advanced Options > Default Services > check the CICAL email address... this should be the email address you want to display on your Today theme.

Then do a battery pull: Leave your device on, pull the battery for 20 seconds, then put it back in and wait for it to boot up.
