I'm learning about ths issue now and its very frustrating! It'll either do what ur describing, or sometimes just goes into a reboot loop and require a reboot. This issue alone has prompted me to go Droid
On the last couple applications that I have installed, I am getting the following error.
Error starting (app name): non-persistable class indices exhausted.
Is there a limit to the number of apps that you can have or something?

There isn't a set "number" of apps that you can have, but your phone only has so much memory. How much "file free" space do you have? To find out, while holding the "alt" key, press E A C E
Its not related to the file free cuz for the most part, its happening mostly when a certain # of apps are installed. And when u install them fast, like when u wipe and want to put things back quick, u can end up with up to 180 mb file free and still get the error. In fact, for me it usually happens at 180 to 190 file free.
