In the process of moving my applications around, I accidentally hid my phonebook and now idea how to find it! Is there any way to show applications that have been hidden?

Hit the menu button and select show all. Try that.

I did that too, and I can't find applications I hid. I hid applications on my home page. Then i thought it would be a great idea to place my hidden apps in a folder. But when I open the folder, it appears to be empty. I tried "show all" and they're still hidden. Is there a way to undo or empty the folder without deleting?

I've done that too. Accidentally moved an app or folder and had to fish it out. Good luck in solving your puzzle
