I recently sold my 8830 and am waiting on an 8300 to come in the mail. When it gets here will I be able to restore the data I backed up from my 8830?

Yes you can from 8300 to 8310.

However with the change from the 8830 to 8300, some databases may not be compatible but address book, bookmarks and settings etc should transfer just fine.
