Theme Questions

I've read several posts on themes and still have a couple of questions on them. I see lots of custom themes but it seems they are all limited to the existing bb theme formats (Zen, Today, etc.) - is this correct?

When someone creates a theme are they able to use an existing format but change what icons appear in that format? For example, I am looking for a screen based on the Today format but that shows only the calendar or shows the calendar, tasks, and memo pad only. Is it possible for this type of theme to be created or not?
