    Best thing is to just hide it (menu>hide) If you delete it the phone will just re-add it with a reset or whenever you re-send the service books.

    This is probably somewhere else, but do those service book apps transfer to an unlocked phone? It only seems logical that they would.

    I was able to go to Options>advanced options>service books and then highlight and delete each and every IM item such as Google Im, AIM, Yahoo IM, etc. And also Vcast. It will delete them from the phone but for some reason every time I do a battery pull they return and I have to redo the process. Possibly this is just hiding them but you actually highlight the item then BB menu and select delete and they do delete from the service book list and also visibly from the phone. Good luck.
