I've tried opening up the email setup launcher and changing it in there, but the email address that I change it to doesn't work. So clearly I'm missing something.

Go to the TMO website and try to do it there.

if i'm not mistaken on this one i think once you set up the email you can't change it, but if i'm wrong someone correct me

On TMO you can change it on the tmo/bis page. You can change as much as you want.

Changing it off the website did the same thing as when I did it through the setup launcher on my phone
