The different folders (sent, junk, etc.) do not show up in either my work email or personal. Is there a way of getting them to display?

In BES you have to specify the folders you want to synchronize - Options > BES Mailbox > check the folders you want to sync. To see them, in your message list click MenuKey > Options > View Folder and select the folder you want to see.

For the BIS accounts, unless it's IMAP, you won't see any subfolders.
