I was wondering if there's a way to somehow make a profile exception for calls from numbers NOT in my address book. That way I could have a special ringer for the numbers that would show up "7145555555" or something instead of "Joe Shmoe". Does that make sense? Thanks!

There is no exception setting for that. All you can do is set a default ringtone and then create exceptions for everyone else.
