Just received my first BB yesterday and trying to figure everything out.

Is there a function that allows me to turn my email off while at work, then turn it back on when I leave?

You could change the profile to Phone Only, or set up your profile so that your email arrivals don't chime when they come in. That's how mine is set up, I get so many emails that it gets annoying to hear a sound every time something comes in. The indicator light is enough for me to see that there's a message for me to check later.

Will 'phone only' vibrate or ring when I receive a call?

Yes, depending on how you personalize that profile. From your Home Screen, go to your Profiles and scroll down to Advanced. Highlight the profile wanted and choose edit from the menu.
