How many apps can one install on the 8310 before there are memory issues? I suppose it would depend on the size of the apps but I also understand that AT&T has the smallest amount of memory of the curves. I am thinking of Opera Mini, vibe and ring, full picture I'd, 6 or 7 themes, and maybe a couple of games and a weather app. Will this cause my Curve to go into memory overloadv

I'm not exactly sure that you can quantify it that way. I have 1 game, WeatherEye, Opera Mini, Google Maps, Got-2, and I am on the phone a lot! I have plenty of memory available.
One of the tricks is to be sure to close out the add-on Apps when you are done with them.
You should be but again it all depends on what apps you have, making sure you close them out right, using menu>close not just the red end button, how many messages and whatnot that you keep on the phone
It depends on the apps themselves I think. Some apps are better designed(?) than others..... example the facebook app slows some peoples bb's down alot. I personally have 5 themes, 6 apps and I have 29xxx left. Memory is not an issue for me.
Also make sure you close out apps etc. Trial and error. Give a few a shot....
There isnt an exact number. On my 8310, I have crackberry, myspace, yahoo messenger, viigo, nav4all, weatherbug, google maps, beyoncd 411, twitter berry, sms on, and vibeand ring, and my file free is at 21. You will be fine as long as you dont get under 12xxxxx
Also, I used crackmem (I think that's what its called) to remove all of the unneeded stock stuff befored I clean installed the OS. That helps to make more room for other apps.

to clear something up, the att and the t-mobil curves have the exact same amount of memory, so att isnt screwing you, t-mobil and att are screwing you lolz. no, the cdma curves have more physical memory but the cdma programming takes up more space so they need it. my gf has a verizon curve and i have an att one and although hers did ship with more memory in acctuallity we have just about the same useable memory, we run most of the same apps, give or take a few. but with everything you mentioned that you wanna put on your phone, i think its a bit much. 6 or 7 themes? they do take up a lot of space so be wary and as long as your over 11,000,000 file free, you should be ok. i think that is.
