When I delete an app off the amazon app store is that it is deleted off my home screen, but when I look in the 'my apps' sections of the store still listed. Does that mean that it is taking up storage on my device?

No that's just the library of apps you have installed.

BUT when you download apps they are saved in your downloads folder as an APK.... These can all be deleted, freeing up a lot of space.

If the app is listed under "Device" than the app is installed. If it is listed under "Cloud" it is an app that you have installed in the past even though it might be uninstalled from your phone. APKs are stored in your download folder. You can delete those at anytime, whether you are running the app or not.

Amazon app store remembers all your downloads / purchases. They are not on the device, but if you buy something, then delete it, you can re download it without having to pay for it again.

Google play Store does the same thing. This shouldn't be a mystery.
