Apps installed via Amazon, yes should be able to uninstall them like normal.
AppStore, no you can't uninstall these built in Apps from Amazon.
I am having the same problem with Amazon's appstore sending me update notifications that I don't want. Tried installing them and the screen either goes black or I have to decline them permission to take my first born son. Help would be welcome. Thanks.
Parental settings can disable some of that, an android filemanager or terminal can take them off.
If you do want to have them I never get a problem just leaving them as is. No upgrades.
After they download and before installation, grab the apks from android folders.

Thanks for your reply. Have activated parental controls. Got an Amazon app store update notification right away. They recur numerous times throughout the day. Hope this is the solution.
Oh, check your misc folder on the device for apk update or something related. Don't have to go through the whole thing just 'misc/android', or 'misc/android/Android'
Did you sign out of the store?

I can't access the store. It won't recognize me. - get a window with a graphic. - no message that's all. On the bright side - I haven't received any update notifications for at least eight hours. Hurray!.
You can use Sachesi to "delete" the two Amazon apps.
When you reboot, they will re-appear, BUT will lie COMPLETELY dormant so long as you don't run them.
