I am totally confused about "Today Screen" and "Dock" ------

I lost a theme that was a simple blank blue screen with 12 icons on the main screen(the screen that is on normally and all the others on a screen that appears when the BB button is pushed - I cannot find where I got the original simple theme

When I find a Theme - is this the layout of the icons?
And the Wallpaper will change the Hello Kitty picture to something else?
