I have fond memories of my bold, and I still leave it charged and connected to wifi because there are some apps I like that I can't get on the z10
If I pop in a sim card adapter and switch back to the 9900 for a bit, how will my service be affected without having bis on my plan anymore
Can I get emails? Will bbm work? Some people are saying they switch back and forth but I don't quite understand how that works

If you have no more BIS, you're 9900 won't be any good to you unfortunately. I was lucky enough that when I switched from my 5GB BIS plan to a family plan, my carrier kept BIS still on my plan.
Unless you change your data plan and remove the BIS it will work just fine. The Z10 doesn't use BIS but your 9900 will need it if you go back to it.
Actually I'm not 100% sure if I still have bis or not. I'll check with Rogers, maybe try to talk them into giving it to me for free or at a discount since I will only sometimes be using the bold
