First try would be the mem card. Try taking it out and see if the prob still happens. My curve did that due to a faulty card. Hope its a simple fix for you.

I am having the same problem after upgrading to the .216 os any help would be appriciated and yes I am properly closing my apps and only have yahoo mobile,google talk and maps and weather eye.
I've got the following apps on my Bold: Windows Live Messenger, Yahoo Messenger, Facebook, Twitterberry, Worldmate Live, Vlingo, Viigo, Youversion Bible Reader & Google Maps. Pretty basic stuff I suppose.

What OS are you currently running. I know there were periodic resets on some of the "older" OS's that were cleared up with an OS upgrade.
i have tapped the back to check if its a loose battery, even shaken it within reason. nothing. i set it down on the table, look away, look back and it reboots.
only apps i have added are: beejive IM, twitterberry and gmail.
this is amazingly frustrating. i have an imported european model set up to work on my tmobile account here. i don't think i can exchange the hardware, so i am praying it is a software issue.
i has no data in it, but the firmware did remain at .237 i didn't even connect it to my company's enterprise server.
i've downloaded no apps, i've installed no apps. the ONLY change i've made to the phone is to the APN address. i changed it from, "internet.t-mobile.com" to "wap.voicestream.com" and of course removed the user and password.
its reset 3 time already, making me think its not a data incoming/outgoing issue. that it might be pure firmware or hardware. any ideas anyone? i don't know what other tests i can do. its an imported phone from overseas, i don't know if i could replace it. not in a timely manner anyway.
