Does CDMA phones go to 2G if 3G is not available?
I don't have a CDMA phone, so i don't know how that works. What would the indicator state if it is 2G? Would EDGE pop up?

yes they will .. but CDMA phone do not display 3g or Edge ...
You will see for the 'equivalent of edge'
1x: When Connected to the network on 1xRTT but not RIM's servers
1X: Connected to the network on 1xRTT as well as connected to RIM's servers
You will see for the 'equivalent of 3G' which is EVDO for CDMA device
1xEV: Connected to the network on EVDO but not RIM's servers
1XEV: Connected to the network on EVDO as well as connected to RIM's servers
Note, I am on Verizon and never saw my phone going to 1X

I thought 1XEV was 3G, 1xev was 2G, and 1X/1x was voice only.

Those are the "slang terms" for them.
Would've sworn I've gotten bbm messages on 1xev. Maybe I'm wrong.
