Date / Time at the top / SMS grouping & searching

Having switched from a Palm Treo Pro I used for two years to a Blackberry takes some getting used to. So a couple of questions on whether I can do some things differently:

I find when typing in a new note, I usually have to switch back to the main screen the get the date. Is there a way to insert it into the notes?

On that note, can you keep the time at the top too?

And can you get rid of how it groups your sms by date, and search for an sms by just typing on the keyboard (instead of pushing the button and going to search)
