I go to Options, Display, Screen Display (which says Change theme as a description) but then...

I see the Theme listed as Blackberry 7 (Active). There is a settings box which opens up a bunch of options (wallpaper, downloads, managing the panels) but no option anywhere to switch themes. Is it just that only one theme is installed? I want a theme that shows me my first few emails and calendar appointments on the home page.

You have to wait for some developers to create 3rd-party themes for OS 7. You are stuck with the stock theme until that happens. Keep checking for a 99xx forum to start here: http://forums.crackberry.com/blackberry-themes-f16/
