You should be able to double tap between the phone app and one of the two Note apps.
Was there a Notes feature within the Phone GUI? Trouble remembering...

Launch the phone app and the app called "Notes" (a BlackBerry Notes app). Once you're on the call, minimize the phone app and switch to the note app. Type notes while you talk, using the green circle to keep track of the phone call.

I used to make notes on phone calls directly from previous BlackBerry 10 and legacy BBOS devices phone software, but I don't think the BlackBerry Android devices have that option within the phone app itself.
