I just might have over look this but I don't see anyway to send a text message to someone that's not in your contact list did I over look something.

You don't even need to pick Use Once by scrolling. Go into SMS, Menu/Create SMS, when you get your Address Book list hold down ALT and type the number (area code included) and it'll automatically know it's "Use Once".
