My contacts sync from Outlook and are grouped in categories which Blackberry handles as a "filter". My problem is when I want to create, reply or forward an email I only see addresses from one of the categories/filters. I 'm sure there must be a setting but I can't find it; can someone help?

To see all of your contacts, click on the Address Book (in the BB), then click the Menu key (with the dots), then Filter.

Uncheck whatever filter name is checked. Then you should be able to see ALL contacts.
