5 minutes is the longest screen timeout you can set with the settings.

Does it keep downloading when you are in another app?

I also wish we could set it for a longer time before sleep mode turns on. 5 minutes is way too short for me.

I'm good about putting my phone to sleep manually to save battery when I don't use it, so for me there is no need to have such a short time period.

Download Battery Guru and let it run side by side with what you're downloading.
Enable the setting in the Setting Menu of Battery Guru, it'll keep your screen awake.

There's another app that will keep your phone awake when it comes to me I'll post it.
It's a app on my phone I just forgot which one keeps the screen awake also.

Edit: ok the other was Parrot voice recorder if you already have it. Parrot has a setting under Display to keep the screen awake. So either of these should suit your needs.
