No, you can't bring back the old call screen. You'd have to load 10.2.0.1809. Or, you know, deal with it.

If you'd like to edit bar files, call up BlackBerry and ask them for signing keys.
No you cannot edit .bar files. Those are compressed BlackBerry .signed files.
