This is probably a really simple thing I'm missing, but how do I enter a new e-mail address in a new e-mail? If I enter abcxyz@123.com the suggestion for a contact, abc@123.com, comes up. If I hit enter or go to the body of the message, my abcxyz e-mail gets replaced with the contact assigned to abc. What am I missing to just use the e-mail address I typed?

When you enter the email, you are offered different choices (at least I am).

The first choice is the entry from the address book which is picked up by default when you hit enter.
However, you can select the following option which will use the address you entered. That's similar to entering an address which is not in the address book:
    Enter new e-mail address w/out autocomplete?-img_20150120_121356.png

Thanks Allwi... I do get the manually entered address showing up there, but when selected, it appears w/ the name of my contact. I did check that contact first and the e-mail isn't listed anywhere in it.

Just tried sending a message and it did go through to the correct (manually entered) email. But when checking my sent folder, it shows as having been sent to my contact's name instead of just the new address by itself. Strange.
