I downloaded a bunch of short videos for later watch, and I like them so much I watch them multiple times. Trouble is, the videos stay where they were even after I close the Videos app (nobody watches the credits, including me, so I quit right after the credits roll).

For some, this may not be troublesome, but it's annoying having to manually roll back to beginning everytime I finished. Is there a way to force videos to roll back to the beginning whenever I finished?

Try this.
Instead of just closing the media player, tap the "<" (back button) first. This should take you back to your list of videos.
The next time you start the same video, it should start at the beginning.

I've done that, because I watch the episodes in a row, it doesn't help. Sometimes a few go magic and return to the beginning, but most times they don't
