I see this get thrown around a lot on this forum but I can't seem to find the official source for this and to be completely honest, Maluuba seems to be faster than BB Assistant.

    Pretty sure it is.

I dumped the OS and found /etc/asr-maluuba.cfg: https://paste.ee/p/Nfdgo

Look back, it's been discussed on CB before. They are in BlackBerry's back yard.

What about the server? Do the voice commands get sent to Maluuba or does BB run a server for this?

If all voice commands are sent to a third-party and processed by them with no idea what they would do to the voice data or text inputs, I'm not sure what many users would think about that.

Looking up an email from a person could leak out confidential business information of pending deals and arrangements between companies. I am not sure that will do BlackBerry much good given the way they try to market themselves.

I think TTS duties are split, somehow.

With Airplane Mode on, I can ask Assistant to play some music or call someone. However, if I say "Calendar", it thinks I want to call someone.

If I turn off Airplane Mode, I can open my calendar through Assistant now.

I've heard that some text to speech work is done by Vlingo, though.
