Don't all apps that are installed use memory?
Parrot has headless service for it's PRO version that can record phone calls. If you don't have PRO you can disable headless in Settings.

The most important thing is to see if it is transferring any data.
If the app is secretly is doing something, but doesn't send data out, then there is no way for anyone to "secretly" spy on you, because your data isn't leaving your phone.
Sometimes it might access the net to check for updates or get news updates, etc. Other than that, no data should be sent from the app that exceeds a few kB.
This is exactly right. In terms of "spying", we do not even require the permission to use the internet on your device (or ask for it) at this point.
