I have installed leaks before, on legacy devices and a few on my Z10 but I am at a loss to explain whats going on recently.

I have tried installing the last 2 leaks and when it`s done I check what version i am running and all is good. Then, I restore my device (to get my settings, apps and such back) and it rolls back to .4181.

This isnt even what I was running when I backed-up so I dont get it!?????
I know i`m doing something stupid here so can someone please tell me what a dumb-*** i`m being and help me out?

I haven't heard anyone else with similar problems, but I noticed you said you load the OS, check version and then restore your device. Am I correct in the assumption that you're not performing the security wipe after loading the new OS? If you don't do that, give it a try and see what happens. So that would make the order load new OS, do security wipe, then check OS version and restore.
If that doesn't fix it, see what happens if you don't restore everything but set your device up as if it's entirely new. Check a little later if the version number is the correct one, or if it has reverted back to the old one.

edit; also, make sure you're actually choosing to restore from a backup. If you choose to reload the OS it will revert to the stock OS.

Are you sure you are checking the OS version and not the software version? I believe for the OS 10.1.0.4633 leak, the software version was 10.1.0.4181.

The software version, that may or may not show for some, is dependent on several things, one of which can be carrier installed software packages that update the versioning in the device, it can be a mis-read, there are several other explanations, but it does absolutely appear as though the OP is talking about the software version, as we don't have a 4181 leak...
