Hi on my passport the bin folder (gmail) is clearly mapped in the "folder mapping" section of Hub - when I would like to delete an email, yet it archives it instead.

So if it's mapped properly why isn't it filing it correctly?

When you delete a gmail message on IMAP, gmail handles this by removing all the tags. This means it ends up in Archived mail automatically. That's how gmail works through IMAP.
Change the following settings so gmail tags your deleted items to the Bin:

When I mark a message in IMAP as deleted:
    Auto-expunge Off.

When a message is marked as deleted and expunged from the last visible IMAP folder:
Move the message to the Bin.
