So I come across this app on amazon. It let you create all kinda server on your phone. Does anyone try that out if you can create your own vpn server?

Can't think of a good reason to run a vpn server on a phone.

The app seems more like a gimmick or a learning tool than anything functional.

Even if you could run a VPN server from your handset, what would be the point? Your carrier connection would be the outgoing path for network traffic and any endpoints you connect would be just as easy to connect using the mobile hotspot feature. For the handset itself there would be absolutely no increase in privacy or security.
