    I just got a used 9900 Bold for pretty cheap. I updated it to 7.1 Bundle 2807 using the BlackBerry Desktop Software, but it's still T-Mobile branded.
    Is there a way to remove any and all branded stuff from the device?

    No. It would have been better for you to buy an unbranded phone, if that was what you really wanted.

    The most you can do, really, is 1) scratch off the T-Mobile logo off the phone. Nail polish remover may work too, and 2) if there's bloatware, hide it in folders.

    That's about it.
