How can I tell how much data I am using and which apps are using however much?

You can see overall data usage under Settings > Data Management, and individual data used by apps under Device Monitor, then select the Mobile Data option.
Most carriers have an app that you can use to monitor data usage.
Via my Z30 on the Telus network
This is what it looks like, it does come in handy especially if you have a data cap.
