I don't like Chrome . My understanding is that Google routes all activity on Chrome through their servers and captures everything. I like some privacy.

You don't. Just stop using it and disable it if you dislike it that much.
If you wish you can disable it by touching the icon , move it to the top of the phone where you can move it to disable.
