Most apps should have it in the app settings. Usually, swipe down from the top and find the settings menu.
Hub, Settings and some other apps can't switch themes.
I couldn't find theme option. Where is it?

My message and whatsapp and calendar backgrounds are black only...

SMS: Three dots at right > Settings > Text Messages > Dark Background toggle
Rest of Hub: No settings for theme.
Calendar: Swipe down from top > Settings > General > Dark Background toggle
Whatsapp: Don't use it, can't help you there.
You should notice a general idea for this.
