Swipe the app feom extreme left you'll get a menu, click on "my apps" under library , click cloud, you'll have list of apps installed and installing on your device.
For the apss being downloaded there is a cross mark click that and the downloading is cancelled

Actually Amazon Appstore makes it very difficult to cancel a download in progress. If you close the app, when you next re-open it, it will likely start the download again. This might even happen if you reboot the device. It's very persistent! I'm sure they thought they were doing us a favor making it so persistent, but it's annoying if you want the download to stop.
May I ask in your situation why do you wish to cancel the download?

I've only run into a situation once where I wanted to stop the download, and that was quite a long time ago.

Oh BTW, you can also tap the top left corner to open the menu instead of swiping in from left of screen. Either works. (In case someone reading this didn't know.)
