Anyone know what the issue may be? It recognizes the devices but never pairs. Also, when using NFC it says the NFC tag is logged and cant be written to.

Are your headphones in pairing mode? Otherwise they you can't enable a new connection. Delete the bluetooth profile for the sennheisers (if there's already one), reboot the phone (just to be sure), set the headphones into pairing mode, try to connect again.

For the NFC tag, I'm sorry but I don't have NFC except for smartphones / tablets.

Another hint. I got one bluetooth speaker here, where I can see the brand tag of the speaker plus another device called "miscellaneous". Sometimes I have to try to connect to the miscellaneous device, that is in fact the bluetooth speaker. So maybe have a look at the device list and check for other entries you can't assign to the right device.
