Im off to America on wednesday and have heard about large bills being racked up without you ever knowing it due to the phone roaming... what steps do I need to take to avoid this happening but still be able to use talk and txt... Im assuming that I wouldnt be able to use apps such as whats app and the like???

You may want to get your phone unlocked and just get some AT&T prepaid minutes when you get over here. That way you can still talk and text. You should also contact your carrier to see their voice and data roaming rates to see if they have any international plans that may suit you for the time you are away.

Set data roaming to OFF.

Or just turn data to OFF all together.

In the settings,
Turn data roaming to OFF
You can use Wi Fi though
+1 on the suggestion about buying a prepaid SIM Card
