My wife is trying to set up an email account and she needs it to leave the message on the server so she can pull it down to her laptop later...

    How can you do this?

What email client is she using? Gmail? Yahoo? Microsoft Exchange?

I use my cable provider linked with Gmail (as an Exchange account) and all I had to do was check a box to leave my messages on the server. The only reason I'm still using my cable provider's email is because I've had that email address for years, for both personal and business, and I don't want to change it.

She has got a work email and a personal email on the same domain. She checks her personal email via web email only -

What domain is she using? Is it a corporate domain (eg, marysmith@apple.com)?

Yes, their companies domain. POP, not imap

When I was using corporate email, leaving messages on the server was already configured on the company's server. There was nothing that I had to do from my end.

If your wife was able to do that with her previous phone, she should be able to do it with the iPhone using the same configuration.

Otherwise, she would have to check with her company's IT department regarding the procedure---at least as far as I know (I haven't used a corporate email exchange for a few years).

I should also add that if your wife sets up her email on her iPhone through Settings and chooses Microsoft Exchange so she gets push email from her company email, there is an option she can check to leave messages on the server.

By default the message is left on the server when polled from a mobile device. There are advanced settings for the account however (depending on mail protocol used) that you can tailor these options with.

But remember, most mobile device (if not all) these days will natively leave a copy on the server when it comes down. The only thing you need to worry about is the delete from server action when deleting off the mobile device. You can either turn that off or simply don't delete the message off the phone until you've had a chance to pull it down from the PC's email client.
