In my case it's Telegram, YouTube, Snapchat, Chrome, and more often - TikTok. Talking of the last one, it's became so popular, that I've decided make short videos about our company on TikTok channel. And for the first few weeks I've decided to use promotion service ( this one: https://hypetik.com ), just for making my potential customers know that I exist in this social network.
I'll play, but not on Android anymore, but for the most part it's all the same stuff - so using the Apple Screen Time app....
News
Files
Messages
Safari/Chrome (use both about the same)
You take out these factory installed apps (along with Phone, Wallet, Settings, Maps and CarPlay/Apple Music), the most used apps that I had to install are....
Gmail (not native on iOS)
SLACK
Target (just for pick up orders)
Shipt (delivery for Groceries)
But that can vary from day to day.
Zoom I'm using a lot on certain days as well.
Chrome for moderating and web searches.
Boggle With Friends
Samsung Email.
Gmail.
Pocket Gopher (Gopher)
Materialistic (Hacker News)
Red Reader (Reddit)
NewsGroup (Usenet News)
Firefox
There are a couple of "NewsGroups" I still check in on from time to time.... same folks from 25 years ago, still there. But lot less information and mostly social discussions now.

On my S9,
Hub Inbox - constant work email since WfH started.
Zoom - not just meetings but for office chats too.
CrackBerry Forums - a break from work stuff.
RSS Savvy - had it on my Z10 before.
Firefox - anything browser related.
There was a good thread in comp.misc where a bunch of people posted the active newsgroups they still visit. It's called, quite predictably, "active text newsgroups." You might find a few more interesting groups.
Most of the time I visit newsgroups in slrn or Thunderbird. The NewsGroups app is my fallback.
BTW if anyone is reading this and suddenly gets the urge to come back to (or try) usenet, you can get a free account from the non-profit eternal-september.org.

How do you make phone calls without the phone app?
I'll answer for myself. I don't use my carrier number for anything, as I prefer to use VOIP services, including Google Voice, MS Teams, Skype, etc.
No one besides my carrier has my actual mobile number, and I don't even know it!
