Rooting your phone gives you super user, or admin access. The benefits are, you can then flash custom ROM's, move apps2sd, remove any of the bloatware that you do not want on your phone that the carrier imposes. Their are also some apps that require root, in order to be used.

not to mention you can edit binaries to change things that would not be able to be changed through any other means.

like wireless tethering, and the notification bar colors and transparency.

check out theunlockr.com I followed their steps to root my htc hero and it was very easy to do
