I've looked everywhere in My Account settings and searched and can't find the option anywhere. How to do this?

Quick note for you... you can still edit your PIN in Settings > General Settings (scroll down the page a bit, there's a text entry for your PIN).

In a future update your PIN will be integrated right into Passport settings.
