My emails are being deleted automatically after 30 days. I'm pretty sure there is a way to stop this, I just can't find it.
Is there anyone that can help me?

It's your sync settings. Go into the settings for the specified account and change it to what you would like it to be.

You can only set it when you create the account on 10.2.1 :

Just go to your device settings by swiping from the top : Settings > Accounts, select the account you want to remove, tap the bin at the bottom, and then add a new one... Look at the settings to get it right. That's all.

By the way, except if you are used to delete all your email after reading them, don't choose the forever option...

Who is your email provider ? If IMAP is enabled in the server, you will be able to search on the server from the device if needed.

If your account is Gmail, you do NOT need to delete before changing this. Just edit the account, select Gmail - Email, and scroll down to Sync Timeframe.
