Go the hub, settings, email accounts, choose the one you want and you'll get the option to change it

At the risk of sounding... technologically unfamiliar... I thought I'd clarify since being new to the interface this was not obvious to me.

When in the Hub tap on the three vertical dots at the bottom right of the screen to get the proper Settings menu, not the pull down Settings menu.
