From my google skills, I got that ATT's 3G bands are 850 and 1900.
Which is listed on the phone specs on the tmobile website.

Obviously I'm missing something since 100% of the people tell me it wouldn't work on ATT. Can someone explain to me why it wouldn't work since the bands are listed.

The specs in your link are wrong... those are AT&T's 3G frequencies
T-Mobile uses AWS frequencies 1700mhz and 2100mhz
AT&T uses PCS frequencies 850mhz and 1900mhz
You will only ever get EDGE with a TMO 9780 on AT&T

General 2G Network GSM 850 / 900 / 1800 / 1900
3G Network HSDPA 850 / 1900 / 2100
HSDPA 900 / 1700 / 2100
