It's Chili Time!
Just finished my most a$$-kickingest batch of chili yet.
Start with cooking a lb of diced bacon.
Then:
The first of three pounds of cubed sirloin tips searing in the bacon fat, with a little garlic powder and Mongolian Fire Oil.

Three lbs of bacon-fat-seared sirloin cooking down with onions, a couple of cans of spicy diced tomatoes and seasonings, with a lb of bacon over there on the side gleefully anticipating its chance to jump in.

Meanwhile, next door back in the pan, juices from the beef, bacon fat, a bottle of Heineken, a couple of ounces of bitter-sweet dark chocolate, and an assortment of chopped chilis and a sh!tload of fresh minced garlic are reducing.

Reduction done reducing, dumped in with the meat on the left with tomatoes and more seasoning, while some of the water gets cooked out of peppers and onions with a little agave nectar on the right.

Added the half-cooked veggies, bacon, black beans, pink beans and pinto beans, and a touch of natural maple syrup, all simmering to perfection.

And of course, the first sample bowl.
Can't tell you what the seasonings are, but I can tell you there's all kinds of chilis and a LOT of garlic. I can also tell you it's goddamm delicious.
Oh yeah, and all these pics were taken with a sh!tty 9900 camera.
Got a few more pics of the vegan batch I made for my veganista wife if anybody's interested.Ed

Late nite dinner at our favorite vietnamese neighborhood joint

Omelet filled with bean sprouts, shrimp and pork.. Slice off pieces, wrap them in lettuce with fresh basil, cilantro and mint.. Mmmmm

Shrimp cured on sugar cane... Roll in rice paper wrappers with veggies..

Followed up by dessert. Bubble drinks. I had the mango, CB the avocado.

Pizza quiz of the day...
Is meatball a traditional pizza topping in your area?
Being from chicago, I have never heard of meatball pizza.. In fact we have to beg, bribe and spend hours instructing the local pizzerias how to make one .. Some have refused.. For others we have had to order a meatball sandwich and ask them to cut up the meatballs and bake them on the za.
However.. Deep dish meatball, mushroom, fresh garlic pizza is my new favorite..if at first you don't succeed, don't try sky diving!
