Yes, you can. If each user has a different profile in Windows (assuming you use Windows), each person will have their own set of RIM folders.
Address books, however, will also be different, unless both users access the same address book, say in an Outlook .pst file. I'm not familiar with syncing other mail apps, so I can't speak to those.
